Cuminyl Acetate IFF
Cuminyl Acetate, also known as p-Isopropylbenzyl Acetate, is an organic compound that belongs to the class of aromatic esters. It is derived from Cuminyl Alcohol and Acetic Acid.
It consists of a Cuminyl (p-isopropylbenzyl) group linked to an Acetate (-COOCH3) functional group.
It has a pleasant, fruity and slightly spicy scent, with a resemblance to Cumin.
it is primarily used as a fragrance ingredient in perfumes, cosmetics, and soaps due to its warm, sweet, and spicy scent, but is also used as a flavoring agent in food products, imparting a mild cumin-like taste.
It is naturally present in Cumin Oil, along with other aromatic compounds such as Cumin Aldehyde and Cuminyl Alcohol and can be synthesised through esterification of Cuminyl Alcohol (p-isopropylbenzyl alcohol) with Acetic Acid or Acetic Anhydride in the presence of an acid catalyst (e.g., sulfuric acid or p-toluenesulfonic acid). The reaction follows the general Fischer esterification mechanism:
Cuminyl Alcohol+Acetic Acid→H2SO4Cuminyl Acetate+H2O
Alternatively, an acetylation reaction using Acetyl Chloride can also yield Cuminyl Acetate.
