Furaneol

Furaneol is a naturally occurring aroma compound that contributes a brown sugar, caramel-like, fruity and nutty aroma to various foods and beverages, including whiskey.

Although malodorous in its pure form and at high concentrations, emanating a rather rancid odour, this powerful material truly comes to life at concentrations up to 5% and very much so in trace amounts in the right formulation. 

Furaneol offers an abundance of brown sugar, rich caramel and fruity nuances in dilution, is somewhat evocative of cotton candy at varying concentrations and exudes a very sweet strawberry aroma when heavily diluted.

While not a primary flavour component of traditional whiskey, Furaneol can be present in some whiskies, particularly those that have undergone certain fermentation or aging processes. It can also be intentionally added as a flavoring agent in non-alcoholic whiskey alternatives to mimic the taste of traditional whiskey

It is especially prominent in strawberries, pineapples, coffee, tomatoes, and other fruits and is a key component in strawberry, pineapple, and exotic fruit accords; frequently employed to create a jammy, sweetened fruit effect.

A powerful and indispensable ingredient that is marginally less fruity than Mesifuran and less maple/nutty than Sotolon.

This white to yellow slightly sticky crystalline powdery material is often used in trace amounts to add a sweet gourmand note.
