Cinnamic Aldehyde
Cinnamic Aldehyde, Cinnamaldehyde or more precisely Trans-Cinnamaldehyde as it is known; being the only naturally-occurring form is the chemical compound that is responsible for giving Cinnamon its odour and flavour.
This material occurs naturally in the bark of Cinnamon trees. Cinnamon trees are the main natural source of Cinnamon and the essential oil of the bark from the Cinnamon tree is approximately 90% of the aldehyde, which is why this material smells very strongly of Cinnamon.
It is powerful, versatile and always essential to the recreation of Cinnamon. Typically; the distinctive character of the majority of Cinnamon based products will be born from Cinnamic Aldehyde.
Concentrated Cinnamic Aldehyde is a skin irritant, which is why it plays a major part in the creation of air care products where it’s potential for irritating the skin is no longer problematic.
You can reduce the overwhelming effect this material has on your formulations, by blending it with Limonene; that will reduce the concentration without overly affecting the character of the Aldehyde.
