About this material

Popcorn Pyrazine

Popcorn pyrazine, specifically 2-acetylpyrazine, is an aromatic compound responsible for the distinctive warm, nutty, and buttery scent of freshly popped popcorn.

It is part of the pyrazine family, a group of nitrogen-containing heterocyclic compounds known for their roasted, nutty, and sometimes earthy aromas.

It is extremely powerful. We love it for how it makes your surroundings smell like you have just been transported to a cosy cinema.

Key Characteristics of Popcorn Pyrazine (2-Acetylpyrazine)

Aroma: Nutty, roasted, buttery, popcorn-like
Occurrence: Found naturally in popcorn, roasted coffee, cocoa, baked goods, and grilled meats
Uses: Commonly used in food flavorings and fragrance formulations to enhance roasted or nutty notes

How It Forms in Popcorn

When popcorn kernels are heated, the Maillard reaction occurs between amino acids and reducing sugars, leading to the production of various flavor compounds, including 2-acetylpyrazine. This reaction is also responsible for the golden-brown color and rich aroma of cooked foods.

Other Sources & Applications

Food Industry: Added to snacks, cereals, and bakery products to enhance flavour
Fragrances: Used in perfumes and scented candles for warm, comforting notes
Coffee & Chocolate: Contributes to the deep, roasted flavours in these products

Creative ideas to explore

Creative directions, not tested formulas.

Sweetness and grain

With sandalwood and dry wood notes

Explore a gourmand sketch framed by wood rather than more sweetness. Compare a creamy wood direction with a drier one, deciding whether the material works best as the centre of the idea or as a softer background.

Citrus confection

With bergamot and a peel direction

Try a contrast between the gourmand character and a citrus opening. Compare a peel-led version with a sweeter reference, looking for a balance that evokes your intended confection without turning every part of the composition sweet.

Petal cream

With rose and a soft floral accord

Set the gourmand material beside a familiar flower for a petal-and-cream concept. Evaluate the floral reference and the sweeter variation together, then choose whether the result should remain recognisably floral or move towards a dessert impression.

Love this SO much. I’m surprised buttery isn’t listed, it gives a lovely toasted buttery nuance that gives nutty notes some real character as well as elevating lactonics. Was scared about the potency but it’s perfect!
